Chaska Lo Mein
Is it authentic lo mein? Heck no. This is Chaska lo mein, cooked and eaten in the Hodnick household.
This recipe serves three people, with leftovers.
This recipe uses carrot, celery, bell pepper, and broccoli for veggies, but you can use whatever veggies you want such as zucchini, pea pods, bok choy, etc.
Ingredients
- 1 cooked chicken breast, cut into bite sized pieces
- 1-2 tbsp canola oil, or another neutral oil with a high smoke point. Use 2 tbsp if using broccoli.
- 9oz noodles
- 1 carrot, cut into small sticks or the shape of your choice
- 1 celery stalk, sliced or chopped
- 1 bell pepper, chopped
- 1 head of broccoli florets (or less, to taste)
- green onions, chopped (optional)
- peanuts (optional)
And for the sauce:
- 1/2 cup soy sauce
- 1/4 cup water
- 4 tsp sugar or honey
- 4 garlic cloves, finely chopped, or pressed (or 4 tsp jarlic)
- 4 tsp sesame oil
- 1 tsp fresh or jarred ginger (optional)
- 1 tsp lime juice (optional)
Instructions: sauce
- combine all sauce ingredients in a small bowl and combine
Bam.
Instructions: the rest of it
- Cook noodles to taste, or according to package directions
- Heat a wok to medium-high heat
- Add oil to wok
- Add all veggies. Toss frequently. Cook for 3-4 minutes, to taste.
- Add chicken. Toss again, cook for another minute.
- Add noodles to wok
- Add sauce to wok
- With tongs, combine sauce until noodles and chicken have soaked up the sauce
- Heat until sauce thickens a bit
Serve. Optionally garnish with green onions and peanuts
