Roasted red potatoes
Ingredients
Serves two.
- eight red potatoes per person
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/2 tsp dried rosemary (optional but recommended)
Instructions
- Preheat oven to 450F
- Cut potatoes in half or quarters, as long as all the pieces are about the same size
- In a large mixing bowl, toss potatoes with olive oil, salt, pepper, and optional rosemary
- Empty potatoes onto a large roasting pan (a pan with shallow sides. a cookie sheet will work too)
- If you want lots of browning, orient the potatoes so that a cut edge (not the skin) is touching the roasting pan surface
- Bake the potatoes in the oven for about 20-30 minutes.
- Serve
