Roasted red potatoes

Ingredients

Serves two.

Instructions

  1. Preheat oven to 450F
  2. Cut potatoes in half or quarters, as long as all the pieces are about the same size
  3. In a large mixing bowl, toss potatoes with olive oil, salt, pepper, and optional rosemary
  4. Empty potatoes onto a large roasting pan (a pan with shallow sides. a cookie sheet will work too)
  5. If you want lots of browning, orient the potatoes so that a cut edge (not the skin) is touching the roasting pan surface
  6. Bake the potatoes in the oven for about 20-30 minutes.
  7. Serve
