Roasted zucchini
You can also use about the same recipe for cauliflower, broccoli, etc. Oil and cook times might vary with different veggies, so you'll have to experiment and do what is in your heart.
Ingredients
Serves one, as a side dish:
- 1 zucchini or yellow summer squash per person
- 1 tsp olive oil
- 1/2 tsp salt
- 1/4 tsp pepper
Instructions
- Preheat oven to 425F
- Chop zucchini into bite-sized chunks, approximately one inch square
- Add zucchini chunks into a large mixing bowl
- Add olive oil, salt, and pepper, then toss.
- Dump the zucchini out onto a large roasting pan
- Roast the zucchini in the oven for about 20-25 minutes. Aim for browing and a shriveled texture.
