Stainless steel tips
Here are some tips when using a stainless steel pan for sauteeing or pan-frying.
- unless you're frying an egg or sauteeing garlic, you want the pan to be hot!
- the pan is hot enough when a few drops of water form into beads and circle around the pan easily.
- food will release naturally when it is ready to flip/toss/stir. if the food is stuck, it hasn't cooked long enough.
- a pan that isn't hot enough will result in undesirable sticking
- faster, high-heat cooking is good
- usually, you need just enough oil to coat the pan surface
- use more oil for thicker foods, or foods that will take longer
